В аромате доминирует насыщенный херес без серных тонов: чернослив, сушёные сливы, инжир, изюм, коричневый сахар, ирис и патока, поверх которых ложатся кожа, табак, орехи, тёмный шоколад, кофе-эспрессо и пряности (корица, мускатный орех). Ряд ревьюеров отмечает пудрово-древесную, «пыльную» составляющую, какао-бобы и чёрные ягоды (ежевику, чернику, чёрную смородину), что придаёт профилю глубину и благородство. Вкус маслянистый, плотный и кремовый, с умеренной сладостью, лакрицей, лёгким ментолом и эвкалиптом, обилием сухофруктов и хересного дуба; несколько авторов улавливают деликатный дым и цитрусово-ягодный удар (клубника, вишня, малина). Послевкусие длинное, тёплое, пряное и слегка сухое, с лакрицей, кофе, тёмным шоколадом и древесной горчинкой.
Оценки исключительно согласованы — 93–94 у всех, включая опытных, так что реальных расхождений в вердикте нет. Опытные ревьюеры делают упор на мощь и интенсивность хереса, называя образец лучшей Karuizawa 1980-х и отмечая раскрытие с каплей воды. Менее авторитетные авторы описывают тот же напиток скорее как утончённый и «кружевной», подчёркивая элегантность, солёно-минеральную свежесть, флоральные и травяные ноты и постепенное улучшение от глотка к глотку. Критики как таковой почти нет; единственные оговорки — лёгкая сухость и древесная горечь в финале да намёк на мускусно-третичные тона, которые здесь поданы сдержанно.

Tasting Notes by Dramming.com: Colour: Mahogany. Nose: Prunes in bacon, dark chocolate fudge, orange marmalade, tobacco, cinnamon, hints of balsamic vinegar to name but a few. Palate: Gentle smoke, prunes, black currants, dark chocolate, strong tea, cinnamon, hints of nutmeg. Finish: Very long, fruity and slightly dry and smoky. Overall: After a very gentle start on the palate, this dram almost bursts into a taste explosion. There is a lot to explore in this malt, also the nose grows larger than Pinocchio’s after a while.Score: 94/100.

Nose: Front: red fruit citrus, plums, raisins, cherry jam, brown sugar, dark chocolate; Middle: light smoke, damp wood, leather, tobacco cigar comes forward, bonfire; Back: spices, cinnamon, star anise, minty (bay leaf), a little bit of face powder. Mouth: oil, citrus, strawberry jam punch through, cherries, raspberry, black currant, then smoke then minty Finish: long, smoky, long citrus, dark chocolate (not sweet), espresso, a touch of floral (covered by the cask influence), wood spice (a lingering bitterness, especially the Zen-like feeling I can capture in the water chestnut barrel). I took three sips. The first sip was small, melting in my mouth with a sour and smoky flavor. The second sip was slightly larger, with more spices, chocolate, and coffee notes. By the third sip, the powdery flavor became quite noticeable. Overall, it got better as I drank it.

These old vintages of Karuizawa are sometimes made into monsters with musky and tertiary notes. There are some of these notes in this cask #2634. Nevertheless, they are expressed with such finesse that this Karuizawa is lace. Then, the very great whiskies do not need to be spectacular.

Comment Whisky House: Color: mahogany with reddish hues. Nose: bewitching, moving. Its noble woody evokes dust in suspension that a ray of light enhances. The cocoa bean and the emery cloth confirm this powdery sensation. Then, change of scenery, black grapes, blackberries and blueberries highlight the quality and complexity of its fruitiness. Palate: fine, racy. It redoubles elegance, the grapes, become dry, alongside blood oranges. The mouth is covered by a carpet of mousse covered with noble spices (cardamom, coriander, cloves). Saline, it shines by the invigorating and salivating qualities of its bitters. Final: tasty, delicate. The black fruits became bright red (wild strawberry, currant). Chocolate and hazelnut go hand in hand with figs and fresh dates. Floral (peony, linden) and herbaceous notes bring us back to the early days of summer. Later liquorice and pipe tobacco emanate from the empty glass.
